Meat Crust Pizza

I'm sure you've seen videos on social media about "meat crust" pizza's just like I have, but hadn't tried one yet.

I finally took the plunge to try and OMG! DELICIOUS!
PREP TIME COOK TIME
10 minutes 35 minutes
Ingredients:
CHICKEN CRUST
16 ground chicken or turkey (I used turkey the 92/8% protein/fat - the leaner is too dry)
2 large eggs (did not use any eggs)
12 oz frozen riced cauliflower, thawed and liquid squeezed out
1/2-3/4 cup parmesan cheese (Feta works great too or any other cheeses depending on what flavor set you're trying to create)
1 tsp garlic powder
1 tsp onion powder
1 tsp italian seasoning
1/2 tsp salt
1/2 tsp black pepper

TOPPINGS
1/2 cup pizza sauce (I like Kirkland brand Organic Marinara)
1 cup mozzarella cheese (or any cheese you like)
20 pepperoni slices (or any meat you like)

Instructions
Set your oven to 400°F (200°C) and line a baking sheet with parchment paper, lightly oiled
In a large bowl, mix together ground chicken, eggs, parmesan, cauliflower and seasonings until fully combined.
Transfer the chicken/turkey mixture onto the prepared baking sheet and press it into a thin, even circle or rectangle.
Pop it in the oven for 20-25 minutes, or until golden and firm. Let it rest for 5 minutes to set.
Crank the oven up to 425°F (220°C). Spread on your favorite pizza sauce, cheese, and toppings.
Bake for another 10 minutes, until the cheese is melty and bubbly.
Let it cool slightly, then dig in and enjoy every crispy, cheesy bite!
