A healthy egg-based dish to eat anytime of day.
One of my go-to breakfasts that is highly satisfying, easily modifiable and just plain delicious!
There is no set recipe for this...I look in the fridge to see what needs to be used up and create from there. Today I had some cooked ground beef left-over from nachos. Because I was using the ground beef, I reduced the number of eggs (normally 3 per person).
This mish-mash also has spinach (previously frozen), sundried tomatoes in olive oil, kalamata olive and sheep's milk feta.
Preheat oven to 350 degrees.
Combine all into a bowl and mix. Always important to add a splash of water to increase the fluffiness of the eggs (same with an omelette). I added approx 1/4 cup
Put into greased baking dish, top with your favorite cheese. I like feta for this combination as the flavors compliment each other.
Bake until done, approximately 20-30 minutes.
Serve and enjoy! I like to add a drizzle of extra virgin olive oil and fresh ground black pepper.
