Egg Yogurt Cake Bread

Yummy with so many variations!




Ingredients:

  • 2 large eggs

  • ⅔ cup (150 g) plain Greek yogurt

  • 1 cup (120 g) Bamboo Flour (https://a.co/d/cEWaniJ)

  • 2–3 tablespoons (25–38 g) Allulose or monk fruit sweetener (or another natural low-glycemic sweetener of choice)

  • 2 ¾ teaspoons (11 g) baking powder

  • 1 teaspoon vanilla extract (optional)

  • Pinch of salt

  • Optional flavor boost: ¼ tsp cinnamon, lemon zest, or almond extract


🧑‍🍳 Instructions:

  1. Preheat oven to 350°F (175°C). Grease or line a loaf pan (8x4 or 9x5).

  2. Whisk eggs in a mixing bowl until light and fluffy. Add Greek yogurt and vanilla, mixing until smooth.

  3. Mix dry ingredients in a separate bowl: flour, coconut sugar or sweetener, baking powder, salt, and any added spices or zest.

  4. Combine the wet and dry ingredients. Stir just until combined—don’t overmix. Batter will be thick.

  5. Bake for 35–45 minutes, or until a toothpick comes out clean.

  6. Cool for 10 minutes in the pan, then transfer to a wire rack.


🔄 Adjustments & Notes:

  • If you're using zero-calorie sweeteners (like monk fruit or stevia blends), stick to 2 tablespoons or follow the brand's sugar conversion guidelines.

  • Want it naturally sweet? Add ¼ cup of mashed ripe banana or unsweetened applesauce for moisture and sweetness—no refined sugar needed.

  • Drizzle a little honey or maple syrup on top after baking if you want a touch of sweetness without baking it in.
